Chef Ghai’s culinary journey has been quite remarkable. He has learned from some wonderful mentors over the years and is very proud of the team he has built at Kutir.

To reflect, Chef Ghai fuses Indian flavours with classic European techniques. He learned these techniques during his time at the Taj group and the Oberoi group. Chef Ghai champions great seasonal produce. In fact, he ensures a good balance of vegetarian and vegan dishes on the menu. Chef Ghai’s first cookbook is called Tarkari: Vegetarian and Vegan Indian Dishes with Heart and Soul. It’s a rich repository of his earliest food and travel memories. This book is about cooking with family. All in all, Chef Ghai pays homage to his parents’ food and cooking.
